Ingredients: 1 can (15 oz) black beans ; rinsed (or equivalent freshly cooked)
1 can (15 oz) tomatoes ; drained (some liquid reserved)
1 cup(s) Frozen corn
1 1/2 cup(s) Pine apple chunks
1/2 tsp ginger (powdered? grated? hmm)
1 tsp curry powder (up to 2)
Cooked rice or pasta
Directions: Combine all ingredients except rice or pasta and heat until flavors mingle and everything is warmed. You may need to add some of the juice from the canned tomatoes or pineapples if it gets too thick. Serve over rice or pasta.
