| Ingredients: | 6 slice(s) bacon chopped 1 cup(s) shredded cheddar cheese 6 eggs 1 small onion chopped 1 lb russet potatoes (about 3 medium), peeled, cubed (about 3-1/2 cups) 1/2 medium red pepper chopped

| Directions: | - PLACE potatoes in large saucepan; cover with water. Bring to boil; continue boiling 5 minutes. Drain well and set aside.
- COOK bacon in large frying pan on medium-high heat. Remove from frying pan; drain on paper towels. Wipe out frying pan with paper towel. Add peppers and onions to pan. Reduce heat to medium; cook and stir 3 minutes. Add potatoes; cook an additional 15 minutes, stirring occasionally.
- MAKE 6 small wells in potato mixture. Add 1 egg to each well; sprinkle evenly with bacon and cheese. Cover pan with lid. Cook 5 to 8 minutes or until eggs are set.
